Forks over Knives

We've heard news of some buzz going around the family that we've gone vegan... this week I'm writing to set the record straight. 

Derek and Mary recently introduced us to a really interesting documentary called Forks over Knives (on Netflix). The documentary supports a whole foods, plant based diet. What this really means is no animal by-products (meat and dairy). We watched it before we went to Boston. Although the science behind it made a lot of sense to both of us we were convinced that living this way would be impossible. While spending a night in Boston with the Staples we ate a vegan breakfast and dinner. We were surprised by what they (Mary) could make with only fruits and vegetables. It was actually pretty good. 

After we got home we decided to try things out for ourselves... we've learned that our self-control does not match the Staples'. We still need a little meat. Over the past three weeks we've made three meals with meat. All in all we decided that we eat too much meat so we are simply trying to eat less of it. And by eating less, we are forced to eat more vegetables. Is it making a difference? Well... we don't really know. This is not a "weight loss" diet, but a diet that helps prevent future health complications such as heart disease and cancer. So the only way to know if it works is if we outlive the rest of you! Ha.

It has become quite an adventure. The hardest part has been finding good recipes. Sometimes we eat one of our vegetable creations and think... never again. Other times the meals are delicious.
